A bubbly, holiday-ish cocktail.

Today is November 29th which is a silly time during the season. Thanksgiving is over but it's still 52 degrees (#climatechange) so I'm not quite fully into my Christmas mood yet. So this Plum Prosecco Smash is a good ~*~*transitional cocktail*~*~. It has bubbles to make it festive and I feel like anything plum-related works for both November and December. 



Plum & Prosecco Cocktail Recipe (makes 2)

How to make it:
  1. Start by making the thyme simple syrup. Combine the sugar, water, and about six thyme sprigs in a small saucepan. Bring the mixture to a boil over medium-high, stirring constantly until sugar dissolves. Remove from it from heat, and cool to room temperature. Remove and discard thyme sprigs. I like to let it sit for a day but you can use it 30 minutes later if you need to. 
  2. Cut your plums into elegant little chunks. Throw them into the cocktail shaker and muddle away.
  3. Add one to two shots of vodka about four tablespoons of the thyme simple syrup shaker, the juice of one lemon and ice to the cocktail shaker. Secure the lid and shake it like your mama taught you.
  4. Pour the cocktail 
Just the tips:
  • You'll end up making too much thyme simple syrup but if you store it in an airtight container, it'll last you up to two weeks. And it's perfect for any sort of ~*~holiday cocktail~*~ so get excited.
